You can use them as is, but it adds some good flavor to roast them first. Just throw them in the oven on a greased baking sheet until you get some golden browning going on.
1. Throw bones and scraps of whatever animal you just ate into a pot
2. Add water to cover
3. Simmer for a few hours until all the tasty goodness has been simmered out of the scraps.
4. Strain out scraps.
5. Either sip broth straight up (it’s a tasty, warming thing on a cold day and a good food for a sick belly that can’t keep much down) or use as a base to make whatever soup or stew you like.
Really that’s the gist of it. You can add veggies like carrots and celery and spices and herbs to make it even tastier, but that’s just a matter of taste. There’s no right or wrong way to do it.
I rarely measure anything when making stock. I eyeball that shit and throw in whatever I have lying around. That’s the way I learned to make it.
My stepmom told me a while ago to add a little vinegar to the water to pull more nutrients out of the bones themselves. Her soup always turns out pretty good, as long as she doesn’t try and add extra healthy crap to it.
I’ve seen this tip a couple times now and I’mma have to try it.
How much vinegar? Like a tablespoon for a large pot? Or more or less?
